The farm, a member of the Biodiversity and Wine Initiative, is run by a philosophy of “working with nature”. The cellar is surrounded by vineyards, olive groves, almond orchards and fynbos gardens, each occupying an integral part of the farms’ ecosystem.
In addition to this, conservation and recycling has become a mantra at Hidden Valley. It is important to us to ensure that we reduce waste by recycling everything possible on the farm.
Hidden Valley is also home to over 3000 olive trees whose fruit produces award winning extra virgin olive oil, Calamata and Noccelera de Belice table olives and home made Tapenade.
They are harvested 60% green and 40% ripe resulting in medium-intense oil.
