Tasting Notes and Food Pairings:

Complex fruity of intensity happens in that they predominate over the mature aromas as the banana or the dried and green fruits as the rind of almond. He needs a time to enjoy his complexity of primary and secondary aromas that contribute freshness and elegance.

In mouth it is an explosion of shades of fresh almond with a surprising retrogusto to nut that obtains an elegant complexity. The balance between the bitterness and pungency is a success of well to do in the oil-mill and the gathered credit the fruit in his just moment. The fresh tones of the kiwi that we had in nose it leaves in mouth citric touches.

Company Background:

We are a family company dedicated to the production of organic extra virgin olive oil next to the Mediterranean sea. Our elegant process from the tree up to his packaging guarantees the major quality of our products. The process of production goes from the withdrawal of the olive in the ideal moment of ripeness of the fruit to the extraction in the minimal time, being stored later in warehouses of stainless steel in darkness and tranquility, to soft and constant temperatures. All that joined the autochthonous variety of olive Blanqueta and Alfafarenca of our olive groves does of our oil the only product in the world.

Production Methods:

First we do throughout the year a work of field and of investigation with our olive groves very deeply to achieve that, by means of respectful culture with the environment and ecological, we could obtain the best product and to obtain homogeneous and exceptional crops.

The nature is unforseeable, the climatology every day is more unstable and for it we invest in investigation to relieve the problems caused by continued drought, shortage of nutrients in the soils or assault of plagues without using chemical elements harmful to the ecosystem.

As the crop is coming closer we do not leave at random the decision of beginning of harvest. Our olives have to be obtain in mint condition and in addition a few characteristics organolectic (aromas and flavors) balanced and a great intensity.

For it we do selection of product and take it to our oil-mill and do the process to laborator scale. We have a mill of tablecloth to elaborate a few liters of sample. We analyze the quantity of antirust, the performance and it is looked to obtain the perfect balance. Once done the tests in laboratory there takes the decision of beginning of campaign and with it the structure of compilation for plots depending on his solar orientation and the variety.
