Tasting Notes and Food Pairings:
Quite intense tones of Green apples and aromatic wet herbs with some lemons and nuts.
Delicate flavours with herbs and toasted hazelnuts to start with followed by a growing crescendo of bitter herbs with some rocket and sorrel. Light pepper comes in and the herbaceous tones continue throughout with pine nuts and vanilla on the after taste, very long finish.
Medium intensity oil with an attractive lightly balance of bitterness and pepper

Agricole Monte Castellio bought a large amount of derelict overgrown land on Lake Garda, Northern Italy in 2002, when it was cleared we discovered an ancient olive grove with many trees over 150 years old. With the help of Renzo Furlani the local expert on Garda olives we restored this wonderful old olive grove and have obtained Organic status and H.S (High Standard) registration producing the finest olive oil the Garda region.
The olives are all hand picked early November and pressed within two hours to retain their freshness and avoid oxidation. The oil is then bottled the following March.
