Tasting Notes and Food Pairings:

Intense and full-bodied taste of olives that have just been pressed, with a pleasantly bitter and spicy aftertaste.

Unheated on strong-flavoured dishes as well as bruschetta, salads, red meats, grilled vegetables and meats, boiled meat and legume soups.

Company Background:

Sinking its roots in the sixties, was born in 1985 and is composed of 59 olive growers.

The olive trees stretch in Trevi, Foligno and Campello Sul Clitunno, in the heart of Umbria and in the Protected Designation of Origin (D.O.P.) Umbria Colli Assisi – Spoleto production area.

The cultivar of our olive trees are Moraiolo (80%), Frantoio (15%), Leccino (5%).

In 1992 creates Flaminio line reserved for the best restaurants and selected retailers.

In 1994 is the first olive mill in the world to receive the Quality Certification UNI EN ISO 9002, renewed and adjusted up to UNI EN ISO 9001:2000.

In 1998-1999 season, is the first olive mill in Umbria to receive the Certificate of Conformity of D. O. P. ASSISI UMBRIA COLLI – SPOLETO.

From the 2006/2007 season joined the system of traceability of APROL Perugia, obtaining the CERTIFICATION TRACEABILITY UNI EN ISO 22005:08. Trace oil means to monitor and certify the entire production process, from beginning to end.

On 30 March 2007 obtained the BRC Food Certification.

Production Methods:

Manually Harvesting. Cold Extraction with the three phases oil decanter.
