Production Methods:

The Harvest – Collect olives in November right when every olives starts to shows its optimal ripening state to achieve the best quality extra virgin olive oil “Senorio de Jaen”. The harvest takes care after careful follow up and planing by various experts.

The process takes place manually preventing to prevent damaging the fruits and the tree. Contrary to most producers we dont collect those olives that have fallen to the ground, the reason is to insure the best organoleptic.
