The Hojiblanca variety is picked at its optimum ripeness. Combined with a bouquet of refreshing but subtle green grass and ripe fruits, it has a slightly bitter and spicy taste, which gives these olives their unique and distinctive character.
Using specially designed "over-the-row "olive harvesters, we are able to cleanly pick the crop at ideal maturity, transport fresh olives to our mill and immediately process fragrant premium extra virgin olive oil.
Mild and fruity. Apple aroma with notes of kiwi, lemon, passion fruit and rosemary. Perfect for salads, fine food preparations and desserts.
A perfect balance of flavours and tastes. It is fruity and green with a slightly almond taste. Sweet, aromatic and reminiscent of fresh fruit and green apple there are also hints of tomato.

Full-bodied, a yellowish green, with a fresh fruity green high intensity. Presents a fresh aroma and a nice green grass smell fig leaf.
Our oil has an intense green color. Smells of olives, chlorophyll, nuts. It has an intense flavor, determined, slightly spicy, without bitter feeling.
Oil with an average intensity of fruity flavours. Very soft in mouth, with an almost imperceptible bitterness and a light irritation at the end. In general, harmonic, agreeable and round.
Best with asparagus wrapped in lard, fried egg and some drops of balsamic vinegar. Also with broad bean, chicory and squid. Excellent with roasted lobster.
Based on the French variety, Picholine, with Columella and Ascolano. It’s a lovely oil, with perfumes of tropical fruit and full flavor. Sweet and buttery, it is at once delicate and rich.
Amantino has an intense golden yellow color with warm light green hues. Its aroma is delicately enriched with hints of officinal herbs. Its taste is delicate and balanced, enhanced with vegetal hints of artichoke and a sweet almond finish.
