Seeing that natives of Santorini are real connoisseurs, they “married” their fava with sautéed fresh onions and gave the dish a new name, in contrast to the plain version whose name remains just as plain!
Ideal “meze” dish to savor and share with friends.
Accompany the dish with salted sardines or Gaea Green Halkidiki olives.
1/4 Cup Gaea Organic Extra Virgin Olive Oil
500 gr \ 1 pound fava from Santorini (the taste is notably different)
1 whole onion
For the “marriage”:
3 onions cut into thin rings
4 Tbsp. capers
A pinch of coarse salt
Boil the fava in 1 liter (4 cups) of water together with the onion and a little salt until it is very soft and the water has been absorbed. Let cool and process in blender until thick and smooth like a puree. Prepare the “marriage”. Heat the olive oil in a frying pan and sauté the onions and capers until golden. Add salt while the onions are still hot, stir and pour them over the fava together with the oil.
The onions can also be served raw over the fava for those who shy away from fried onions. In this case garnish the fava with fresh basil leaves as well. For a tastefull result, drizzle with a few drops of olive oil.
