Brief
After the olives are harÂvested, they’re washed as twigs and leaves are removed. Then they are crushed, usuÂally with a hamÂmer mill but traÂdiÂtional stone mills are still used too. The pulp is then genÂtly stirred in a process called macÂerÂaÂtion to release the oil droplets before the extracÂtion phase which involves spinÂning the juice free from the pulp in a cenÂtrifuge or, more traÂdiÂtionÂally, pressÂing it between mats. Finally, durÂing sepÂaÂraÂtion, the oil is removed from the water.
