Brief
Pour some into a small glass and warm the glass in your hands, covÂerÂing the top. After 30 secÂonds, smell it. Does it smell fresh? Sip some and swirl it around in your mouth. It should taste like fresh olives and there should be some bitÂterÂness. And it should sting your throat a litÂtle (or more than a litÂtle). That’s a good sign. Now imagÂine what you might enjoy eatÂing with that oil.
