How do you taste olive oil?

Pour some into a small glass and warm the glass in your hands, cov­er­ing the top. After 30 sec­onds, smell it. Does it smell fresh? Sip some and swirl it around in your mouth. It should taste like fresh olives and there should be some bit­ter­ness. And it should sting your throat a lit­tle (or more than a lit­tle). That’s a good sign. Now imag­ine what you might enjoy eat­ing with that oil.
