Most olives are har­vested by hand, or by using mech­a­nized rakes. Some pro­duc­ers have machines that shake the olives free from the branches. And mod­ern ​‘high den­sity’ farms use har­vesters that drive over rows of small trees to rake the olives free. Each method has its advan­tages and lim­i­ta­tions.
