Most olives are harÂvested by hand, or by using mechÂaÂnized rakes. Some proÂducÂers have machines that shake the olives free from the branches. And modÂern ​‘high denÂsity’ farms use harÂvesters that drive over rows of small trees to rake the olives free. Each method has its advanÂtages and limÂiÂtaÂtions.
