What is the IOC standard?

When we say an olive oil is extra vir­gin, for exam­ple, we are say­ing that it meets a cer­tain stan­dard. The most estab­lished set of stan­dards for olive oil is the one laid down by the International Olive Council (IOC) in Madrid — an inter­gov­ern­men­tal orga­ni­za­tion spon­sored by the United Nations with 18 mem­ber coun­tries (the U.S. is not one of them). The USDA has stan­dards that are almost the same as the IOC’s. Other coun­tries, notably Australia, have their own set of stan­dards for domes­tic and imported oils.
