When we say an olive oil is extra virÂgin, for examÂple, we are sayÂing that it meets a cerÂtain stanÂdard. The most estabÂlished set of stanÂdards for olive oil is the one laid down by the International Olive Council (IOC) in Madrid — an interÂgovÂernÂmenÂtal orgaÂniÂzaÂtion sponÂsored by the United Nations with 18 memÂber counÂtries (the U.S. is not one of them). The USDA has stanÂdards that are almost the same as the IOC’s. Other counÂtries, notably Australia, have their own set of stanÂdards for domesÂtic and imported oils.
