Traditional Indian cuiÂsine often very high heat. The smokÂing point of high-qualÂity extra virÂgin olive oil can exceed 400°F (244°C) which is high enough for most cookÂing, but for extremely high heat appliÂcaÂtions, a refined seed oil can be the only choice. Unfortunately, it’s not the healthÂiÂest way to go.
