Extra virÂgin olive oil is unreÂfined, and thereÂfore has higher levÂels of the healthy comÂpoÂnents that were in the olive fruit to begin with. Refined olive oil (which is simÂply called ​‘olive oil’) is a healthy monounÂsatÂuÂrated fat, but it has fewer of the antioxÂiÂdants and polypheÂnols that EVOO is famous for.
