Extra vir­gin olive oil is unre­fined, and there­fore has higher lev­els of the healthy com­po­nents that were in the olive fruit to begin with. Refined olive oil (which is sim­ply called ​‘olive oil’) is a healthy monoun­sat­u­rated fat, but it has fewer of the antiox­i­dants and polyphe­nols that EVOO is famous for.
