All unripe olives are green, and turn pur­plish as they ripen and even­tu­ally black. Olive oil pro­duc­ers decide when to har­vest based on a lot of fac­tors. Some har­vest their olives when they’re green, some like to have a mix and oth­ers har­vest when olives are fully ripe.
