Olive oil standards?

Recent News

When we say an olive oil is extra virgin, for example, we are saying that it meets a certain standard. The most established set of standards for olive oil is the one laid down by the International Olive Council (IOC) in Madrid — an intergovernmental organization sponsored by the United Nations with 18 member countries (the U.S. is not one of them). The USDA has standards that are almost the same as the IOC’s. Other countries, notably Australia, have their own set of standards for domestic and imported oils.
