There is con­tro­versy about using organolep­tic assess­ment to deter­mine the grade of an olive oil by mostly the large pro­duc­ers argu­ing that taste tests are subjective…even while prop­erly trained pan­els have shown remark­able con­sis­tency. But there’s no debate that tast­ing olive oil is the best way to know if it’s really good.
