There are too many con­sid­er­a­tions to pro­vide advice on the best time to har­vest olives. Harvesting early will pro­vide a higher qual­ity olive oil. A later har­vest will increase yield. But many other fac­tors come into the equa­tion, such as cli­mate con­di­tions, the olive cul­ti­var and pro­cess­ing meth­ods.
